Today, I made chocolate pudding. It was delicious.
First I chopped up chocolate.
Then I assembled all the ingredients.
1/3 cup sugar
1/3 cup cocoa
2 T cornstarch
1/8 tsp salt
1 3/4 cups whole milk
1/4 cup cream
4 ounces bittersweet chocolate baking bar
1 tsp vanilla
I put the dry ingredients in a pan.
I whisked them together. There were still some lumps and white stuff, so I whisked some more. It was fun.
Then I put about 3 Tablespoons of the milk in and whisked that in. We added the rest of the milk and the cream. I turned the stove on medium. It was very thin. I stirred some more and then it started thickening. It took a long time, at least by the stirrer's perspective.
Then when it started bubbling around the edges and was kind of thick, I added the chocolate. I mixed it in to melt. I turned the heat off and added the vanilla and kept stirring.
Mommy poured the pudding, already starting to set, in the cute little yogurt jars.
It was super rich but not overly sweet. I like it. It's intense and dark.
I suggest if you're having someone over who likes chocolate pudding, you should use this recipe. I think it would be good with sweetened whipped cream. I tried it with just cream. It wasn't as rich but it was still super good.
