I stirred milk until it just started simmering. Then we put in vinegar. We stirred it a minute. The curds separated from the whey. And then we poured it into one of the molds Lydia had never used. There were two, but we only used one. We put it on a cooling rack for cookies over a pan and the whey dripped out. After a while, we put a lid on it and put a chocolate jar on it to weight it down so more whey would drip out. After a few hours, we took it out and salted it on the sides and top and bottom. Then we put it on the rack because she said that would take out some of the whey.
While we were checking it before we salted it, I tried some of the whey. It was delicious. I like it. It was sweet.
